I am not a good cook, so this blog post is feeling a little awkward for me to write! In fact, we have a Chef that cooks for us several times a week… But everyone needs some good dinner ideas every once and a while! AMIRIGHT?
I am from an Italian family and food is part of my DNA. I do have a few favorite dinners that I can whip up by memory and are a family classic at this point in my household. They taste like home to me and my kids love them. #YOUREWELCOME
1. Lentil Soup– I serve this with rice on a plate and is super super yummy. It also is very healthy and so good, it makes my mommy heat happy when I see my kiddos chowing down on this. Here is a legit recipe but my only note is I always add a can of organic Chick Peas to the soup. I throw the beans in a blender for about 30 seconds and it becomes hummus. I pour that into my pot for a little flavor and extra protein. I also use vegetable or chicken broth, I don’t use water. I feel like that gives it more flavor.
2. Chicken Pot Pie– My girlfriend made me this several years ago, when I just gave birth to Roman. She was on the food chain to bring my family and I a meal and for the last 10 years I will make this at least once a week. It is a healthier recipe than most pot pies and once you make it once, you learn the ways of the dish and I can make this with my eyes closed at this point.
3. Chinese Chicken Salad– We also serve this with rice and the secret to this treat is the dressing. You have to get Joey Ds Chinese Chicken dressing to make this dish soar (#NotSponsored ?) I swear I could drink this dressing! It is a treasure. I don’t typically love salads for dinner, I feel like its more a lunch dish, but if you serve this with rice, it is a complete meal and one of my husbands favorites. You basically just chop everything super small and spoon the salad over rice and pour the dressing over it all and you are a happy camper! Here’s the details. Obviously you can skip the dressing part since Joey Ds in bomb.com. We always just buy a rotisserie Chicken and then shread it into the salad. If there is an ingredient you don’t like (for me: the crunchy noodles) then just leave them out of your salad. We add red peppers.
